When bringing any product to market, it is key to do plenty of market research. When its gin, it becomes rather enjoyable!

The first of our Cuckoo Gin products is an original dry gin. We wanted to hit the market with a well-rounded classic gin. Smooth enough to sip, stand its ground with a tonic, and flexible in cocktails.

After months of sampling and identifying our benchmarks in the market, we set about creating our first product. Slowly moving from enthusiastic novices to amateurs, we enrolled the help of a Master Distiller from world renowned Heriot-Watt University to further understand the reactions and chemical bonds taking place in the distillation process.

We also experimented with juniper, this makes up over 50% of the botanicals we use, so it was key to give this plenty of thought. Unlike many gins, we use a blend of juniper to create a unique taste and mouthfeel. Mixing Italian, Serbian and Macedonian juniper also helps future proof the botanical as we don’t become over reliant on one berry. This will help avoid any issues with bad harvests much like those documented in 2016.

The final result is a complex gin with a smooth mouth feel to aid those who like to sip. After a slightly sweet, piney juniper start, the flavour develops into citrus from orange, grapefruit and lemon with a lingering taste of cinnamon spice and liquorice. Dry on the finish with a peppery kick from coriander seeds. It is light on the nose with floral coming from chamomile flowers. We use orange peel and ginger to garnish -emphasising the citrus and adding a little warming heat.
